Instructions

Prepare a baking sheet lined with parchment paper to cool the almonds after coating.

In a heavy saucepan, combine sugar and water over medium heat, stirring until sugar dissolves completely.

Attach a candy thermometer to the pan and bring the syrup to a boil without stirring. Let it reach 115-118°C (239-244°F) (soft crack stage).

Remove from heat and gently stir in the almond extract and food coloring if using.

Immediately add the almonds to the syrup and stir quickly but gently to coat all the almonds evenly before the sugar hardens.

Spread the coated almonds in a single layer onto the prepared baking sheet.
