- Rinse the rice under cold water until the water runs clear. Drain well.
- In a medium saucepan, heat olive oil or butter over medium heat. Add onions and cook until softened, about 3 minutes.
- Stir in garlic, turmeric, cumin, smoked paprika, salt, and black pepper. Sauté for 1 minute until fragrant.
- Add rinsed rice and stir to coat the grains with the spice mixture.
- Pour in the chicken or vegetable broth, add bay leaf if using, and bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes until rice is tender and liquid is absorbed.
- Remove from heat, fluff rice with a fork, garnish with fresh herbs, and serve warm.
Notes
For vegan option, use vegetable broth and olive oil instead of butter.
Add frozen peas, carrots, or corn for extra nutrition and color.
Leftovers can be stored in the fridge for up to 3 days and reheated in the microwave.
