Ingredients
  

  • 4 dolphin fish Mahi Mahi fillets, about 6 oz each
  • 2 tablespoons unsalted butter melted
  • 2 tablespoons olive oil
  • 3 garlic cloves minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves
  • Salt and freshly ground black pepper to taste
  • Optional: lemon slices for garnish

Method
 

  1. Preheat oven to 425°F (220°C). Lightly grease or spray a baking dish.
  2. Pat fish fillets dry with paper towels and place them in the baking dish.
  3. In a small bowl, mix melted butter, olive oil, minced garlic, lemon juice, lemon zest, parsley, thyme, salt, and pepper.
  4. Brush the lemon herb butter mixture evenly over the fish fillets.
  5. Optionally, place lemon slices on top of or around the fish for extra flavor.
  6. Bake in the preheated oven for 10-15 minutes or until fish is opaque and flakes easily with a fork. Avoid overcooking.
  7. Remove from oven and let rest for a minute. Serve warm with your favorite gluten-free side dishes.
